How To Cook It

Low and slow. Bring your liquid to a boil then reduce to a low simmer. Cover and cook 45 to 55 minutes until the grain opens and curls. Natural variation in grain size means some pieces may open slightly earlier — that is normal and beautiful. Drain any excess liquid. Fluff with a fork and let rest five minutes.
