Ingredients

  • 2 cups cooked turkey, shredded
  • 1 cup wild rice, rinsed
  • 8 cups chicken broth
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • 1 cup fresh spinach, chopped
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice (optional)

Steps

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion, carrots, and celery; sauté until softened, about 5-7 minutes.
  3. Stir in the minced garlic, dried thyme, and rosemary, cooking for another minute until fragrant.
  4. Pour in the chicken broth and add the rinsed wild rice and bay leaves. Bring to a boil.
  5. Reduce the heat to a simmer, cover, and cook for 45-50 minutes, or until the rice is tender.
  6. Add the shredded turkey and chopped spinach; simmer for an additional 5 minutes.
  7. Season with salt, pepper, and lemon juice (if using) to taste.
  8. Remove bay leaves before serving. Enjoy your warm soup!
